Quick and Easy Banana Bread

When I was growing up, my mom wasn’t much of a baker. We always had home-cooked meals on the table, but when it came to baking, most of our treats came from the store. However, there were a few special goodies she’d make us on occasion, and this banana bread was one of them. Since she didn’t bake often, this bread felt like a real treat, and we loved it every time she made it.

Once I had kids of my own, I started making this banana bread for them, and it quickly became a household favorite. Now, all three of my kids are married and living on their own, and each of them has called me for this recipe. It’s so easy and quick, yet it’s so delicious that I’m sure it will become a favorite in your home too. Give it a try and let me know what you think. Enjoy!

ngredients:

  • 2 cups Bisquick
  • 2 eggs
  • 2/3 cup sugar
  • 1/4 tsp. baking soda
  • 1 cup mashed bananas (about 3-4 bananas)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour your baking dish. I like using a loaf pan or an 8×8 baking dish, depending on what I have on hand.
  3. Mash the bananas with a fork. This is a great way to use up older bananas, especially once they start to turn brown.
  4. In a mixing bowl, combine the Bisquick, eggs, sugar, and baking soda. Add the mashed bananas and stir until everything is well combined (but don’t overmix).
  5. If you’d like to add mix-ins, such as walnuts, dried cranberries, or chocolate chips, fold them in now (though my kids prefer it plain).
  6. Pour the batter into your prepared baking dish.
  7. Bake until a toothpick comes out clean—about 45 minutes for a loaf pan or 35 minutes for an 8×8 pan.
  8. Serve hot with plenty of butter!
